黑木耳口感嫩滑,味道鲜美,不仅为家常菜增添不少风味,更难得能提供人体格外丰富的营养。

黑木耳含有丰富的蛋白质,其蛋白质含量堪比动物食品,老百姓餐桌上久食不厌,有“素中之荤”的美誉;此外维生素E含量非常高,是美白肌肤的佳品;最重要的是黑木耳中铁的含量极为丰富,是菠菜的20多倍,猪肝的7倍多。面无血色很多时候因不良饮食所致,进食黑木耳能起到很好的补血作用,因此是养颜补血,预防缺铁性贫血优质的食物来源。养血操作正常,肌肤也就健康红润。

黑木耳丰富的植物胶原有强大的吸附作用,可把残留在人体消化系统内的灰尘、杂质吸附集中起来排出体外,从而起到清肠作用。肤色往往反映肠胃健康状态,肠胃一旦洁净,肤色自然也会容光焕发。

经常性便秘的人,会因毒素长时间停留在体内,流窜到身体各部位之后,便会引发许多问题,像是肌肤黯沉蜡黄、面疱暗疮等,就是由于体内累积了太多毒素所造成的。黑木耳丰富的膳食纤维不仅能促进肠胃蠕动,还能加快体内新陈代谢,防止便秘,有利于体内大便中有毒物质的及时清除和排出,并且有利于胆结石、肾结石等内源性异物有一定的化解功能。

黑木耳含有维生素K和丰富的钙,镁等矿物质,能减少血液凝块,预防血栓等症的发生,有防治动脉粥样硬化和冠心病的作用。但是由于黑木耳有活血抗凝的作用,有出血性疾病的人不宜食用。孕妇不宜多吃。

黑木耳虽然具丰富的营养价值,对改善肤色也有一定效用,但黑木耳主要的功能成分非常容易受温度破害,烹饪过程已经大大影响黑木耳所能发挥的疗效。

新鲜黑木耳含有毒物质,虽然市面售卖的黑木耳都经过暴晒处理,有毒物质大大减低,但烹煮前仍旧必须用水彻底浸泡,将剩余的毒素溶于水,使干木耳最终无毒。浸泡干木耳时最好换两到三遍水,才能最大程度析走有害物质。
